Gut Friendly Oats Peanut Butter and Jelly
Ingredients (Serves 2)
- 1 banana
- 1 cup of oats
- 2 tbsp Linwoods Milled Flaxseed
- 1 cup of plain kefir
- 1 cup of almond milk
- 2 tbsp maple syrup
- 1 cup of strawberries, chopped
- 2 tbsp peanut butter
Toppings
- Chopped strawberries
- Peanut butter
Method
- Start by mashing the banana in a large bowl and then add the oats, milled flaxseed, kefir, almond milk and maple syrup and mix to combine. Then leave overnight in a sealed container in the fridge to thicken.
- In the morning, blend the strawberries into a puree and serve the overnight oats layered with the strawberry puree and peanut butter. Top with some more chopped strawberries to serve.
