This fiesta corn salad recipe is a spicy and creamy summer salad that will be a big hit at your next BBQ or picnic.
The best part about this salad is that it contains Linwoods Shelled Hemp which adds a delicious nutty taste and additional nutrients such as magnesium for energy.
Drizzle with sour cream or sauce of your choice for some extra flavour.

Ingredients
- 6 corn cobs
- 3 tbsp olive oil
- Zest and juice of 1 lime
- 1 small clove garlic, finely grated
- 1 tsp salt
- 1/4 tsp black pepper
- 1 small red bell, finely chopped
- 1 avocado, finely chopped
- 200g cherry tomatoes chopped
- 1/2 cucumber, diced
- 1/2 small red onion, thinly sliced
- 1 small jalapeño,
- 1/4 cup Linwood Shelled Hemp
- 2 tbsp sour cream
- 2 tbsp chopped coriander
Instructions
- Place the corn on a baking tray and drizzle with olive oil and season with salt and pepper
- Then
- In a large bowl, whisk lime zest and juice, garlic, salt, pepper, and remaining 2 tablespoons oil.
- Carefully cut corn kernels off cobs. Add corn and bell pepper to bowl; toss to coat with dressing. Add avocado, onion, and jalapeño and gently stir to combine.
- Drizzle with sour cream and top with coriander.
