This fresh and delightfully sweet mango vegan salad with shelled hemp seeds will be your new lunch obsession.
You will also love the sweet sticky dressing! The salads contains a mixture of vegetables and fruit to give a medley of textures and flavours and we have included Linwoods Shelled Hemp for plant-protein, omega 3 and magnesium.

Ingredients
- For the Dressing:
- 1 tbsp grated ginger or 1 tsp ground ginger
- 2 tbsp honey or maple syrup
- 2 tbsp lime juice
- 2 tbsp extra virgin olive oil
- 1 tbsp miso paste (optional)
- For The Salad
- ½ a Chinese Cabbage, finely chopped
- 4 baby cucumbers sliced
- 1 large mango sliced
- 1 ripe avocado, diced
- 1 cup cherry or baby plum tomatoes, sliced in half
- 2 tbsp Linwoods Hemp Seeds
- 2 tbsp chopped peanuts
- Salt and Black Pepper to taste
Instructions
- Whisk together the dressing ingredients in a small jug or bowl; you can also blend the dressing together using a hand blender. Set to one side.
- Assemble all the salad ingredients. You can opt to layer them up or mix everything together in a big bowl. Reserve some hemp seeds and peanuts for sprinkling on top.
- Add the dressing and toss to combine; reserve a little more for over the top.
- Garnish the salad with hemp seeds, peanuts and some black pepper.
