Ingredients
- 100g buckwheat flour
- 100g ground almonds
- 50g brown rice flour
- 150g apple puree
- 2 tbsp dairy-free butter OR coconut oil (melted)
- 3 tbsp Linwoods Flax, Chia, Apple & Cinnamon Powder
- 3 tbsp coconut sugar
- 3 tbsp maple syrup
- 2 tsp cinnamon
- 1 tsp mixed spice
- 60ml almond milk
- 1 tsp baking powder
- Pinch of salt
- Half an apple (optional)
Instructions
- Pre-heat the oven to 160 degrees celsius.
- Combine the buckwheat flour, brown rice flour, ground almonds and Linwoods flax, chia, apple & cinnamon mix in a bowl.
- Add the melted butter or coconut oil to a food processor along with the coconut sugar, maple syrup and apple puree. Blend together.
- Pour this mixture into the bowl with the dry ingredients then add in the cinnamon, mixed spice, pinch of salt and baking powder. Stir well.
- Slowly pour in the almond milk, stirring as you do so.
- Line a loaf tin with baking paper and pour in the loaf mixture - spreading out evenly.
- Optional - Peel half an apple and cut into small cubes. Sprinkle on top of the loaf.
- Place the loaf in the oven for 30-40 minutes or until golden brown on top and cooked through into the middle.
- Allow to cool for at least 20 minutes before cutting and enjoying!
- TOP TIP - serve warm with peanut butter for an incredible treat.
