Ingredients
- Filling
- 40g Linwoods goji berries
- 40g unflavored pea protein powder
- 30g cocoa powder
- 35g coconut sugar
- 40g cashew nut butter
- 130ml almond (or coconut) milk
- Coating
- 60g dark chocolate
- 1 tsp Linwoods goji berries, ground
- 1 tsp coarse sea salt
Instructions
- In a mixer or nut grinder, grind up your goji berries until they’re fine, like a powder.
- Mix all your filling ingredients together in a bowl until you get a dough that you can shape using your hands.
- Shape 12 balls – or truffles – out of this dough.
- Melt your dark chocolate in a bain marie (a glass or metal bowl on top of a pot of boiling water).
- Dunk the truffles in the melted chocolate.
- Top with more goji berries and a bit of sea salt (this is optional but lovely!)
- Place on a nonstick pan or a tray lined with aluminum foil. Refrigerate for 2 hours or until the chocolate has set.
