Ingredients
- 200g dates
- 1 tablespoon peanut butter, smooth (unsweetened)
- 1 tablespoon coconut oil
- A pinch of salt
- 2 tablespoon Linwoods Flaxseed
- 250g dark chocolate, chopped
Instructions
- Put the dates in a bowl of room temperature water and soak for an hour. They will soften making them easier to blitz.
- 2Rinse the dates and pop them in the food processor. Blitz until smooth. Once the dates have started to form, add the peanut butter and continue to pulse.
- Add the coconut oil, salt and flaxseed. Blitz again until the mixture is really smooth.
- Roll or use two spoons to form the mixture into one inch balls and place on a baking tray. Place in the freezer for 30 mins.
- In a sauce pan, over a pot of simmering water, melt the chocolate. Let cool for a few minutes.
- Dip the balls into the chocolate with a spoon and place back on the cookie sheet.
- Return the balls to the freezer for at least 20 mins to allow chocolate and caramel to harden.
- Remove from the freezer before serving.
