Ingredients
- Pancake:
- 2 ripe bananas
- 2 large eggs
- 2 tbsp of Linwoods Milled Organic Flaxseed
- 1 tsp of baking powder
- Juice of one lemon (2 tbsp)
- 1½ tbsp of poppy seed
- ½ tsp of vanilla extract
- (optional) 2 scoops of vanilla whey protein
- Topping:
- 1 tsp of Total Fage Greek Yogurt
- 1 tsp of lemon juice
- 1 tsp of honey
Instructions
- Blend pancake ingredients in a blender until smooth
- Meanwhile heat some coconut oil in pan to a high heat, pour in mixture and allow pancake to sit for approximately 3 - 4 minutes before flipping
- Mix honey, yogurt and lemon in a bowl for topping
- Serve while hot!
