Banana and Pecan Bread

A great way to use up any overripe bananas, this Banana & Pecan Bread is deliciously moist & nutty.

Ingredients
- 3 bananas
- 3 eggs
- 1 cup of wholemeal flour
- 1 cup of self-raising flour
- 1 ½ teaspoon of baking powder
- ½ cup of greek yoghurt
- 2 tablespoons of honey
- 1 ½ teaspoon of cinnamon
- 1 teaspoon of nutmeg
- ½ cup of pecans
- 2 tablespoons Milled Flaxseed, Sunflower, Pumpkin, Sesame & Goji berries
Instructions
- Pre-heat oven at 180 degrees.
- Combine the wholemeal flour, self-raising flour, baking powder, cinnamon, nutmeg and flaxseed blend into a bowl, then mix.
- In a food processor, add the bananas and blitz until you have a purée like substance.
- Add the eggs, greek yoghurt and honey to the banana puree, fold gently together.
- In a food processor roughly blend the pecans for a few seconds, leave 6 whole pecans for the top of the loaf.
- Add the dry ingredients to the wet ingredients. Lastly add the chopped pecans.
- Mix gently until all is combined.
- Line a baking tin with baking paper then pour in banana batter, pop a few whole pecans on top of the batter.
- Put into oven for around 1 hour or check with a knife and when it comes out clean, it is ready.
