Vegan Pesto Eggs Recipe

An easy vegan version of the viral TikTok recipe, pesto eggs recipe.

Vegan Pesto Eggs provides a flavoursome boost to traditional egg recipes but we’ve also included extra ingredients such as garlic and tomatoes for a delicious Mediterranean taste.

This popular breakfast recipe is ready in less than 10 minutes and also includes Linwoods Milled Flaxseed which is a fantastic vegan egg substitute and is high in Omega 3 (ALA) which supports the maintenance of normal blood cholesterol levels.

Vegan Pesto Egg Alternative recipe

Ingredients

100g vegan basil pesto 

200g extra-firm tofu

2 garlic cloves, crushed

2 spring onions, chopped

2 tbsp Linwoods Milled Flaxseed

Salt and pepper

4 slices of sourdough (or other bread)

To serve:

Tomatoes

Rocket

Method 

  1. Add the tofu to a bowl and mash with a fork to a crumbly mix. Stir in the crushed garlic, spring onion, salt and pepper.
  2. Add about 60g of the Pesto to a small frying pan and allow to heat through.
  3. Pour in the scrambled tofu mix and warm through, stirring the Pesto into the tofu for about 5 minutes.
  4. Toast the bread, spread on the remaining Pesto, and top with some rocket. Divide the Vegan Pesto Eggs between the slices of Pesto toast and serve with your desired toppings. Eat straight away or the Vegan Pesto Egg mix will keep in a sealed container in the fridge for 2-3 days.
