Ingredients
- 150g oat flour
- 50g almond flour or ground almonds
- 4 tablespoons cocoa powder
- 2 tablespoons Linwoods Milled Flaxseed, Cocoa & Berries
- 1 teaspoon cinnamon
- ½ teaspoon mixed spice
- Pinch of ground cardamom
- 1 teaspoon baking powder
- 100g cooked apples
- 100g dates, soaked in hot water then drained
- 1 egg
- 100ml almond milk
- 1 teaspoon vanilla extract
- 2-3 pears, peeled
For the glaze -
- 50g dark chocolate, chopped
- 1 tablespoon coconut oil
- 4 tablespoons cacao nibs
Instructions
- Preheat the oven to 180 degrees C and grease and line a loaf tin.
- Mix together the oat flour, ground almonds/almond flour, cocoa powder, flaxseeds, cinnamon, cardamom, baking powder in a large bowl.
- Place the cooked apples, dates, almond milk and vanilla in a blender or food processor and whizz up until smooth.
- Pour into the dry ingredients and mix well. Spoon some of the mixture across the base of the loaf tin. Place the pears stood up a little bit spaced apart.
- Spoon the rest of the mixture around the pears to fill the loaf tin.
- Bake for 40 minutes until firmed up then leave to cool in the tin. Place on a wire rack once cooled.
- Now melt the chocolate and coconut oil and spoon over the loaf around the pears. Sprinkle with cacao nibs - then slice and serve!
