This tasty Quinoa dish is perfect for lunch or dinner so make a few extra portions to pop into the fridge! If you're not a veggie, add some chicken or fish for some extra protein.

Ingredients
- 500ml Water
- 1 Red onion
- 400g Chick peas
- 1 Aubergine
- 170g Quinoa
- 2 Teaspoons olive oil
- 1 Teaspoon turmeric
- ½ Teaspoon cumin
For the dressing:
- 2 Dessert spoons of Linwoods Milled Flaxseed and Goji Berries
- 1 Teaspoon of paprika
- 1 Clove of garlic
- 60ml Soy sauce
- 1 Lemon
- 1 Tablespoon olive oil
- 2 Tablespoons hot water
Instructions
- Place the turmeric, paprika and water in a saucepan and bring to the boil.
- Add the quinoa and cook for 15 minutes.
- Heat the oil and cook the onion and chopped aubergine until tender.
- Add the cumin and chick peas and cook for a few minutes.
- Whisk the hot water, olive oil, lemon juice and zest, soy sauce, garlic and Flaxseed with Goji berries together.
- Mix all the ingredients together and pour over the dressing.
- Garnish with chopped coriander and serve.
