Goji, Nut & Seed Protein Flapjack Slices

Ingredients

  • 1 cup rolled oats
  • ½ cup uncooked quinoa
  • 2 tablespoons Linwoods Organic Whole Chia Seeds
  • 1 teaspoon ground cinnamon
  • ½ cup mixed seeds
  • 2 tablespoons chopped dried apricots
  • 2 tablespoons goji berries
  • 2 tablespoons coconut flakes
  • 2 dessert spoons Linwoods Hemp Protein
  • 1 large banana, mashed
  • 2 tablespoons maple syrup or honey
  • 3 tablespoons almond or cashew butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 180 degrees C and grease and line a 20cm round tin.
  2. Mix together the oats, quinoa, chia seeds, mixed seeds, dried fruit, protein powder and coconut in a large bowl.
  3. Mash the banana and whisk with the maple syrup/honey, nut butter and vanilla until smooth.
  4. Pour this into the dry ingredients and mix well to combine - it should stick together slightly.
  5. Tip the mixture into your prepared tin and smooth out evenly. Bake for a total of 25 minutes until golden and firmed up.
  6. Leave to cool then slice into 6-8 portions. Enjoy!
