Chocolate, Cranberry & Goji Berry Cheesecake



  1. First make the base: Place the Snackettes in a food processor or blender and whizz up until broken down.
  2. Melt the nut butter, coconut oil and maple syrup and pour this into the food processor. Give it another whizz to allow the ingredients to combine.
  3. Tip out into a loose-bottomed tin and press into the base to cover. Set aside while you make the filling.
  4. Simply place all of the ingredients in a food processor/blender and whizz up until quite thick and smooth.
  5. Pour over the base, smooth out and freeze for at least 4 hours.
  6. When ready to serve remove from the freezer and chill for 20 minutes. Pop out onto a serving board and decorate with the dried fruit. Now slice and serve!
