2. Choc Chip Buckwheat Pancakes
Key Ingredients: 2 cups buckwheat flour, 2 cups almond milk, 1 tbsp baking powder, 1 tbsp vanilla essence, 2-3 tbsp stevia powder, ½ cup of dark choc chips.

4. Cinnamon Swirl Pancakes
These cinnamon swirl pancakes inspired by Rosanna Davison are so easy to make, and they’re great for you. These gluten free pancakes are made with buckwheat and are a tasty treat for any day, but perfect for pancake Tuesday.
Key Ingredients: 250ml unsweetened almond milk, 120g buckwheat flour, 1 ripe banana, 1 heaped tbsp milled flaxseed or milled chia seed, 1 tsp ground cinnamon and Virgin coconut oil. You could even replace the ground cinnamon and chia seed / flax seed with our new milled flax, chia seed, apple and cinnamon mix.
For the cinnamon cream: 1 can of full-fat coconut milk (chill in your fridge overnight), 2 tbsp coconut sugar, ½ tbsp ground cinnamon, 1 tsp vanilla extract, 6-7 tbsp unsweetened almond milk to blend.
