Who says a salad at Christmas has to be boring? This Warm Apple, Kale and Bulgar Wheat Salad is filled with tasty and festive ingredients such as cooked apples and pomegranate seeds. This would make a delicious Christmas Day starter!

Ingredients (serves 1):
- 40g bulgar wheat
- Vegetable stock
- Salt & pepper
- 1 tbsp Linwoods Shelled Hemp
- 2-3 handfuls of kale
- Red apple, quartered
- Olive oil
- Pomegranate seeds
Dressing:
- 2 tsp apple cider vinegar
- 2 tsp olive oil
- 1 tsp maple syrup
- Salt & pepper
Method:
- Preheat the oven to 180C.
- Place the apple slices on a lined baking tray and drizzle with olive oil, salt & pepper. Mix to evenly coat the apples. Roast for 20-25 minutes.
- 10 minutes before the apples are cooked, coat the kale with olive oil, salt & pepper and place on a baking tray. Cook for 10 minutes.
- Meanwhile, cook the bulgar wheat according to the packaging instructions using vegetable stock instead of water. Drain once cooked.
- Whisk the dressing ingredients together in a small bowl.
- Place the bulgar wheat and shelled hemp seeds onto a plate. Coat with the dressing and mix gently. Add in the kale, roasted apples and pomegranate seeds. Sprinkle with more shelled hemp seeds.
