Carrot Cake Overnight Oats

Ingredients

  • 50g oats
  • 250ml water
  • 1 tsp cinnamon
  • 10g maple syrup or 10 drops liquid stevia
  • 1 tsp vanilla extract
  • 80g dairy free yogurt of choice, almond/cashew/coconut
  • 7g Linwoods Health Foods milled flaxseed
  • 70g finely grated carrot
  • Sliced fresh Mango, Activated Nutmost Maple Walnuts & Maple Syrup to serve

Instructions

  1. Mix together water, oats and cinnamon in a bowl. Microwave for 2 minutes.
  2. Stir through maple syrup or stevia, vanilla extract, dairy free yogurt of choice and milled flaxseed.
  3. Add in finely grated carrot and place mixture into the fridge overnight.
  4. Thin out with a little almond milk or water if they are too thick for your liking.
  5. Serve topped with maple syrup, fresh mango and maple walnuts.
