Goji, Nut & Seed Protein Flapjack Slices July 5, 2017 0 Share No Comments on Goji, Nut & Seed Protein Flapjack Slices Goji, Nut & Seed Protein Flapjack Slices Ingredients 1 cup rolled oats ½ cup uncooked quinoa 2 tablespoons Linwoods Organic Whole Chia Seeds 1 teaspoon ground cinnamon ½ cup mixed seeds 2 tablespoons chopped dried apricots 2 tablespoons goji berries 2 tablespoons coconut flakes 2 dessert spoons Linwoods Hemp Protein 1 large banana, mashed 2 tablespoons maple syrup or honey 3 tablespoons almond or cashew butter 1 teaspoon vanilla extract Instructions Preheat the oven to 180 degrees C and grease and line a 20cm round tin. Mix together the oats, quinoa, chia seeds, mixed seeds, dried fruit, protein powder and coconut in a large bowl. Mash the banana and whisk with the maple syrup/honey, nut butter and vanilla until smooth. Pour this into the dry ingredients and mix well to combine - it should stick together slightly. Tip the mixture into your prepared tin and smooth out evenly. Bake for a total of 25 minutes until golden and firmed up. Leave to cool then slice into 6-8 portions. Enjoy!
