Goji Berry & Choc Truffles September 8, 2015 0 Share No Comments on Goji Berry & Choc Truffles Goji Berry & Sea Salt Chocolate Truffles Serving Size 12 Cook Time 1 hour, 30 minutes Total Time 1 hour, 30 minutes Notes Recipe by Protein Pow Ingredients Filling 40g Linwoods goji berries 40g unflavored pea protein powder 30g cocoa powder 35g coconut sugar 40g cashew nut butter 130ml almond (or coconut) milk Coating 60g dark chocolate 1 tsp Linwoods goji berries, ground 1 tsp coarse sea salt Instructions In a mixer or nut grinder, grind up your goji berries until they’re fine, like a powder. Mix all your filling ingredients together in a bowl until you get a dough that you can shape using your hands. Shape 12 balls – or truffles – out of this dough. Melt your dark chocolate in a bain marie (a glass or metal bowl on top of a pot of boiling water). Dunk the truffles in the melted chocolate. Top with more goji berries and a bit of sea salt (this is optional but lovely!) Place on a nonstick pan or a tray lined with aluminum foil. Refrigerate for 2 hours or until the chocolate has set.
