Ingredients
- 1 cup rolled oats
- ½ cup uncooked quinoa
- 2 tablespoons Linwoods Organic Whole Chia Seeds
- 1 teaspoon ground cinnamon
- ½ cup mixed seeds
- 2 tablespoons chopped dried apricots
- 2 tablespoons goji berries
- 2 tablespoons coconut flakes
- 2 dessert spoons Linwoods Hemp Protein
- 1 large banana, mashed
- 2 tablespoons maple syrup or honey
- 3 tablespoons almond or cashew butter
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 180 degrees C and grease and line a 20cm round tin.
- Mix together the oats, quinoa, chia seeds, mixed seeds, dried fruit, protein powder and coconut in a large bowl.
- Mash the banana and whisk with the maple syrup/honey, nut butter and vanilla until smooth.
- Pour this into the dry ingredients and mix well to combine - it should stick together slightly.
- Tip the mixture into your prepared tin and smooth out evenly. Bake for a total of 25 minutes until golden and firmed up.
- Leave to cool then slice into 6-8 portions. Enjoy!
