Giuseppe’s Perfect Breakfast
My toast with cheesy spinach, smoked salmon and poached egg is a very good excuse to crawl out of bed in these cold mornings. Especially if you wash it down with my super-healthy mixed berries, Greek yoghurt and flaxseed smoothie.
Like most Italians, I’m very fussy when it comes to food. I want my meals to be delicious, visually appealing and, most importantly, healthy. So, although Emma’s brief was very exacting, I could not wait to start testing different options to make breakfast better!
After all, I face exactly the same challenge every time I try to concoct new dishes for my own family. Also, breakfast is such an important meal, it sets you up for the day, both physically and mentally… Admittedly, not everyone has the time to cook something from scratch in the morning; that’s why I created two dishes.
The smoothie is a perfect on-the-go solution, while the eggs & smoked salmon on toast is perfect if you’re working from home – and when you put both together, you have the ideal leisurely weekend breakfast.
For the toast, you’ll need:
• 250g fresh spinach
• 2 cloves of garlic
• 2 tbsp extra-virgin olive oil
• 2 tbsp Linwoods cold-milled flaxseed
• Salt and pepper to taste
• 2 slices of seeded rye bread
• 100g goat’s cheese
• 2 slices of smoked salmon, approximately 50g
• 2 fresh eggs, cold from the fridge
For the smoothie, you’ll need:
• 1 cup blueberries
• 1 cup raspberries
• 1 cup Greek yoghurt
• 2 tsp clear honey
• 4 tbsp Linwoods blend of Flaxseed, Sunflower, Pumpkin & Chia seed with Goji berries
