Ingredients
- 225g Self raising flour
- 225g Sugar (brown or caster)
- 1 tsp Bicarbonate of soda
- 50g Linwoods flax, sunflower, pumpkin & sesame seeds & goji berries
- 1 tsp Baking Soda
- 3 Eggs
- 250g Courgette
- 125g Vegetable Oil
- Rind & juice of 2 to 3 Limes (or Lemons)
- For the Icing:
- Butter, icing sugar, lime juice – mix up really well then smear liberally over the top of the buns.
Instructions
- Mix eggs, oil and sugar.
- Add all dry ingredients.
- Grate in the courgette.
- Add the Lime/Lemon
- Spoon into bun cases (the mixture is quite runny – fill the cases half full)
- Cook in the oven at 180 deg C for 10 mins
- Once the buns are cooled ice with a frosting
