Balsamic Pasta Salad Recipe including Hemp Seeds
If you feel like you don’t have time to eat healthy, try this Balsamic Pasta Salad! A delicious recipe including hemp seeds to provide extra nutritional value.
Easy to make ahead and in bulk for lunch and dinners throughout the week. This recipe also includes Linwoods Milled Hemp which provides an easy way to add plant-protein, fibre and omega 3 into your diet.
Ingredients
Serves 8
500g shell pasta
300g cherry tomatoes, halved
1 red pepper, diced
1 orange pepper, diced
1 cucumber, diced
1 red onion, diced
250g artichokes, chopped
30g fresh parsley, chopped
¼ cup Linwoods Milled Hemp
250g kalamata olives, sliced
1 tin chickpeas, rinsed and drained
Dressing:
80ml olive oil
4 tbsp balsamic vinegar
2 dijon mustard
Salt and pepper to season
Method
- Cook pasta according to package directions then rinse with cold water and add into a large bowl.
- Prep and dice all veggies then add to the bowl.
- Whisk together dressing ingredients then pour over salad
- Store in the fridge for up to 5 days
