5 Summer desserts to enjoy:
1. Summer fruit sponge with ice cream
It's hard to look past a summer sponge when it comes to finding a great summer dessert. The summer sponge is all about the fruit that accompanies, and we recommend a fresh helping of strawberries, raspberries, blueberries and blackberries with your sponge. To make your sponge cake, you will need to combine eggs, butter, flour and sugar (see here for steps) and bake for 20-25 minutes. Gently heat your fruit over the hob and add some sugar. Spoon this over your sponge, serve with ice cream and enjoy.
2. Crunchy fruit crumble
Keeping fresh fruit as the key ingredient of our dessert, we move from a sponge to a crumble. A winner with most families, a fruit crumble is a great way to finish a Sunday family meal, and works with a wide range of fruit including apples, rhubarb, berries, apricot and spiced plums. Our fruit of choice for the summer crumble is blackberries and apples.
Slice and cook your fruit on a low heat before combining butter and flour to create a breadcrumb texture. Pour this over the fruit and bake in the oven. For an added berry kick, include 2 dessertspoons of Linwoods milled flaxseed, cocoa and berries in the crumble mix.
3. Savory Carrot Cake
It doesn't all have to be about sweet dessert treats this summer, and one vegetable that is always a winner when it comes to desserts is the humble carrot. Grate some carrot and mix with dried apricots, nuts and honey. Add some cinnamon, flour and baking powder to this, and spoon into a bowl before spooning into a cake can. Bake this for 40 mins and serve with some fresh cream and enjoy.

4. Sweet potato chocolate brownie
Sweet potato and chocolate may not exactly sound like a match made in heaven, but this recipe from peanut butter girl is a tasty and healthy way to enjoy one of life's most tempting treats – chocolate brownies! Peel and grate two sweet potatoes, and mix it with eggs, vanilla extract, olive oil and honey. Honey is a great natural alternative to sugar for desserts. Add baking powder, baking soda and a cup of cocoa powder with Linwoods flaxseed and cocoa mix, before combining and adding to a baking tray. Cook for 25-30 minutes and enjoy. 5. Frozen summer yoghurt
Last on our list is a real summer treat, and a low fat treat at that – a frozen berry yoghurt. All you will need is 3 ingredients to make a low fat, healthy summer treat. Simply grab some fresh berries (frozen will also work), some low-fat or condensed milk, and a 500g tub of 0% fat natural Greek yoghurt. Blend the berries to a puree before folding in the milk and yoghurt. Add this to a tray and place in your freezer until frozen. Enjoy this as a healthy alternative to ice-cream.
