The ingredients you will need to make this tasty Linwoods banana bread are: 

Makes 1 loaf of bread

Preparation and cooking time – 40 minutes

1. Prepare the loaf tin:

Pre-heat your oven to 180C and grease and line a loaf tin with greaseproof paper (baking parchment).

2. Make your bread mix:

Now that you have lined your loaf tin, start to work on your bread mix.  Firstly, cream together the sugar and butter using an electric mixer until combined to a smooth, soft texture.  Add one egg to the mix at this stage along with a dessertspoon of flour and beat into the mix until combined.  After this, you add in the second egg and once again, beat until combined.


3. Fold flour and bananas into your mix:

Take your 2 bananas and mash them in bowl.  Take the mashed bananas, and add it to your bread mix alongside the remaining flour, the baking powder and your Linwoods flaxseed cocoa and berries mix.  Gently fold this together until all the ingredients have been combined in the bread mix.


4. Fill the loaf tin with bread mix:

Pour the combined mix into your lined loaf tin, ensuring you have used all the mix and have levelled the mixture in the loaf tin.  Place your tin in the centre of the pre-heated oven and cook for 30-35 minutes until the top is golden and the mix is cooked through.  Use a skewer to check that the mix has been cooked through.


Once cooked, allow to cool in the loaf tin before turning out.
