The ingredients you will need to make the fish pie are:  

  • 500ml Milk
  • 1kg Potatoes
  • 750g of mixed fish – cod, salmon and smoked haddock
  • 275g Butter, unsalted (125g for fish sauce, 150g for mash)
  • 1 Celery stick, sliced
  • 1 Carrot, chopped
  • 2 Boiled eggs, peeled
  • 2 Dessertspoons of Linwoods Shelled Hemp
  • 1 Tablespoon of dried mustard (English)
  • 4 Tablespoons of plain flour

This dish will take 1 hour to prepare and cook and will feed 4 – 6 people.

1. Start to poach your fish:

The first thing you need to do is get your oven pre-heated to 200C.  Then you add your milk and fish (sliced) to a saucepan and poach lightly.  This is the initial cooking stage for the fish.

2. Create your sauce and add to the poached fish:

In a large saucepan, heat your butter (125g) and add the mustard and flour and until all ingredients are combined.  Remove this from the heat and slowly add the poaching liquid.  To this mix add your carrots and celery.

3. Put ingredients into an ovenproof dish:

Place the fish and boiled eggs into an ovenproof bowl.  Let the liquid mixture come to the boil and season.  Pour this over the fish and get ready to prepare the mash.

4. Prepare the mash for the fish pie:

Peel and boil your potatoes until the are soft to touch.  Drain and add 150g butter and mash the potatoes.  Spoon this mix over the top of the fish mix in the ovenproof dish and brush lightly with melted butter to help get a golden finish.  You could also add some cheese to the mash for an additional texture and flavour.

5. Add your shelled hemp and cook the fish pie in oven:

Sprinkle some shelled hemp over the top of your mash and place the dish into the pre-heated oven for 20 minutes to cook.  Remove from the oven when ready, serve and enjoy.
