The ingredients you will need to make the cottage pie are:
- 450g minced beef
- 1 tbsp vegetable oil
- 675g potatoes – peeled and chopped
- 2 dessertspoons of Linwoods Milled Organic Flaxseed
- 2 tbsp plain flour
- 1 onion – chopped
- 2 carrots – chopped
- 300ml beef stock
- 1 tbsp tomato puree
- 1 tbsp mixed herbs
- 2 leeks – sliced
- 50g butter
- 50g grated cheese
This dish will take 1 hour to prepare and cook and will feed 4 – 6 people.
Step 1 – Prepare your potatoes and leeks:
The first thing you need to do is prepare your potatoes and leeks. This will be the main element of the pies topping, so add your peeled and chopped potatoes to boiling water, cooking for 15 minutes until soft and ready to mash. Drain and remove from the heat. For the leeks, place them in boiling water for 5 minutes and then drain.
Step 2 – Brown your mince:
The next thing you have to do is heat a large saucepan. Add your vegetable oil to the pan and add your minced beef, onions and carrots, cooking until the meat has been browned. To this you add flour then gradually add your stock, tomato puree and mixed herbs and bring to the boil.
Step 3 – Add your milled organic flaxseed:
Once the mince mixture has browned, and the stock boiled, remove it from the heat and add 2 dessertspoons of flax seed. Season this with some salt and pepper and add the mince mixture to an ovenproof dish.
Step 4 – Top the mix with potatoes:
Once your mince mix has been added to an ovenproof dish, it's time to get the potato topping ready for the dish. Mash the potatoes and leeks into a large bowl, adding the butter and half of your cheese. Season with salt and pepper and spoon this mashed potato mix over the meat. Sprinkle the remaining cheese over the top of the cottage pie and add the bowl to the oven at 180C for 25 minutes.
Step 5 – Serve and enjoy:
Once the pie has been in the oven for 25 minutes, it should have a crispy crust from the mash and cheese mix. Sit the bowl at the centre of your table and dish it up to your family, and enjoy.
