In case you haven’t already guessed, we’re talking about chicken, and today we are going to use our milled flaxseed, nuts and CO-Q10 mix to both fill and crumb crust the chicken.  This dish is known as piquant pesto chicken and is packed full of great flavour, in the creamy, smooth filling and the crunchy, breadcrumb crust.  This mix of textures makes it a popular choice as an addition to a cold or warm salad, or as part of a larger dinner for the family.  Below we will take you through the steps in preparing your piquant pesto chicken.

The ingredients you will need for this dish are:

• 6 chicken breasts (boneless)
• 2 dessert spoons Linwoods milled flaxseed, almonds, Brazil nuts, walnuts and CO-Q10.
• 150g breadcrumbs
• 150g cream cheese
• 50g fresh basil leaves
• 8 vine tomatoes
• 2 crushed garlic cloves
• 4 tbsp. olive oil

Serves 6 people.

Step 1 – Prepare your chicken:
Preheat your oven to 200C / gas mark 6.  Clean and slit each chicken breast to form a pocket for the stuffing.

Step 2 – Prepare the creamy stuffing mix:
Place the basil, garlic, olive oil and one dessertspoon of the flaxseed, nuts and CO-Q10 mix into a bowl (or processor) and blend until smooth.  Add the cream cheese to this, and mix well.

Step 3 – Stuff your chicken:
Fill each chicken breast pocket with your creamy stuffing mixture and brush the outside of each breast with olive oil.  When you have done this, it’s time to begin your breadcrumb crust.

Step 4 – Create your breadcrumb coating:
Mix the breadcrumbs with second spoonful of flaxseed, nuts and CO-Q10 and press each chicken breast into this crumb mixture.  Ensure each chicken breast is coated well.

Step 5 – Cook chicken and prepare garnish:
Transfer the crumbed and stuffed chicken to an ovenproof dish and season.  Add the chicken to the oven and cook for 20 minutes or until it is cooked through.  You can also add the vine tomatoes to the oven at this point, with a little olive oil, to add as a refreshing side to the dish.

Step 6 – Remove from oven and serve:
Once your chicken has been cooked through, remove it from the oven and garnish with some fresh basil and serve.

This dish ensures you enjoy the great taste of chicken with the added benefits of flaxseed, nuts and CO-Q10.  A great source of magnesium, 30g of this mix can provide your body with 25% of its RDA of magnesium.  The addition of nuts in the mix provides your body with a great source of selenium, which helps support the function of your immune system.
