Stew can be full of many great flavours and will also last you and your family for a few days (unless it's so tasty that it all goes in one sitting). So what are you going to need to make our Wholesome Irish Stew?
The ingredients you will need to make this dish will be:
• 950g of lamb or beef for stewing.
• 1kg of carrots
• 2 onions
• 1.3kg potatoes
• 1/2 teaspoon of fresh thyme
• 2 dessertspoons of Linwoods Milled Chia Seed
You will also need to make a stock for your stew and in order to make the stock we recommend using the following ingredients:
• 1 sliced carrot
• 1 quartered onion
• 500ml of beef stock (or use the bones from your lamb)
• 1/2 celery stick
• 1 bay leaf
• 2 spring thymes
• 1 spring of parsley
• black peppercorns
• 1 teaspoon of salt
Once you have all your ingredients in place, it's time to get started on your stew.
Step 1 – Make your stock:
The first thing you have to do is make the stock that will provide so much flavour to your stew. First place your bones or beef stock into a pot. To this you then add a quartered carrot, quartered onion, half celery, thyme, parsley and salt. Add 2.5 litres of water and bring to the boil. Bring your stock to the boil and let it simmer for 2 hours. In this time you can start to prepare the rest of your ingredients for your stew. For a richer, taste experience you can add a cup of red wine to your stock.
Step 2 – Prepare the ingredients for your stew:
Get your remaining ingredients prepped for your stew by dicing your meat (we have chosen lamb today), peeling and chopping your potatoes, peel and cut your carrots into slices and finally slice and dice your onions.
Step 3 – Strain the stock:
Once your stock has been simmering for 2 hours, take it off the heat and strain into a new pot. Use a sieve to ensure you have a smooth stock for your stew.
Step 4 – Brown your meat and add to stock:
The next thing for you to do is to take another pot and brown your meat off in it. This will help seal the flavour of the meat and add to the great taste of your wholesome stew. Once your meat is brown add your stock to the pan. Bring this mix to the boil and remove any impurities that reside on the top of the stock. Simmer this for another 10 minutes.
Step 4 – Add your remaining ingredients:
Once you have removed all your impurities it's time to add the rest of the ingredients to your stew. Start by adding your potatoes and to this add the diced carrots and onions. Cover your stew and let it simmer for 30 minutes ensuring your carrots, potatoes and meat are all cooked through.
Step 5 – Add 2 dessertspoons of Linwoods Chia Seeds:
To your stew you now add 2 dessertspoons of Chia seeds. Chia seeds are rich in fibre and a great source of magnesium. A great source of Omega 3 they make a great addition to supporting your balanced. Step 6 – Remove from heat, garnish and serve:
Once all your ingredients are cooked through, remove your pot from the heat and let it cool for 15 minutes. Prepare your garnish of bay leaf, thyme and parsley and get ready to serve. You can also serve with a fresh crusty baguette; perfect for soaking up those tasty juices. For a vegetarian alternative, substitute your beef stock with a vegetable stock and add chick peas and lentils in place of your meat.
