Unlike most pancake recipes, our pamper me pancakes use no butter in the mix.  The addition of flaxseed, cocoa and berries seeds add a great taste and texture to the pancakes with 75% reduced fat in the cocoa in the process.  So let’s begin.

The ingredients you will need to make the pancakes are:  

• 55g Plain flour
• 150ml Milk
• 2 Dessert spoons of Linwoods Milled Flaxseed, Cocoa and Berries
• 300ml Fresh orange juice
• 2 Tablespoons of honey
• Pinch of salt
• 1 Egg
• Fresh berries
• Icing sugar to dust

Step 1 – Prepare your pancake batter:
The first thing to do is to create your pancake batter. To begin creating your batter it’s important that you sieve flour and salt into a bowl.  This will remove any lumps and give you a fine powder that will be the base of your mix.  To this you add 2 dessert spoons of flaxseed, cocoa and berries.

Once you have this initial mix, stir it about and create a well (hole) in the middle of your bowl.  This will be used to mix the egg into as shown below.

To this mix you then slowly add milk and whisk it to create your batter.  Be sure to do this slowly to begin with.  Whisk the mix until it is a smooth texture with no lumps.

Step 2 – Create the pancake:

Now that you have your batter created, it’s time to create some wonderful pancakes.  Firstly you need to heat a non stick pan.  Use a little bit of oil or rub some butter on the base of the pan.  Once the pan is heated, pour your batter into the pan.  Only add a small amount though, ensuring the mix coats the bottom of your pan.

Roll the mix around your pan so it coats the whole area of the bottom of your pan and let it cook for approximately 1 minute.  You should start to see some air bubbles appear through the mix.  Once these start to appear, it is time to flip your pancake and cook the other side.

Cook the other side of your pancake for another minute or so and remove the pancake from the pan and add to a plate.

Step 3 – Garnish:
Now that your pancake is made it’s time to garnish it and really treat yourself.  Add the orange juice and honey to a pan and heat gently.  Fold your pancakes into a triangle and add them to the pan again for a few seconds to coat them in the orange and honey syrup.  Remove the pancakes from the heat and garnish with your choice of filling.

Serving suggestions:
• Strawberries, raspberries and blueberries.
• Sugar and lemon juice.
• Cointreau and orange segments.
• Melted chocolate and mallows.
• For a savory option add some ham and cheese
